broccoli cheddar soup


A creamy and comforting Broccoli Cheddar Soup loaded with fresh vegetables, sharp cheddar cheese, and a velvety texture. Perfect for cozy dinners or a hearty lunch.

Ingredients
5 1/2 tablespoons butter, divided
1 1/3 cups chopped carrots (about 3 medium carrots)
1 cup chopped celery (about 2 stalks)
1 cup chopped yellow onion (about 1 small onion)
2 cloves garlic, minced
3 cups low-sodium chicken broth
4 cups fresh broccoli florets (about 1 medium head)
2 cups whole milk
1 1/4 cups heavy cream
1/4 cup all-purpose flour
2 1/2 cups sharp cheddar cheese, shredded
Salt and black pepper, to taste
Optional: a pinch of nutmeg for added flavor
Instructions
