Potato Soup Recipe


Slowly ladle about 1 cup of the hot cooking water from the soup into the skillet with the roux, whisking continuously to form a smooth mixture.
Gradually pour the roux back into the pot of soup, stirring well to combine.
Simmer the Soup:

Add the spring onion to the pot. Simmer the soup for another 5–7 minutes, stirring occasionally, until it thickens slightly. Season with salt and pepper to taste.
Blend (Optional):

For a creamy texture, use an immersion blender to purée part of the soup, or blend a portion of the soup in a blender and return it to the pot.
Serve:

Ladle the soup into bowls and garnish with chopped parsley, shredded cheese, or croutons, if desired. Serve warm.
