Let me tell you about my relationship with potatoes.
I grew up eating potatoes. Mashed, roasted, fried, baked—I loved them all. But in my forties, I started hearing that potatoes were "bad" for you. I cut them out. I felt like I was losing a friend.
Then I started reading the science. And I realized that potatoes aren't bad for you at all. In fact, when prepared correctly, they're one of the most nutritious foods on the planet.
