Ingredients
Pasta:
12 ounces spaghetti
For the Sauce:
2 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped (preferably packed in oil)
1 cup heavy cream
½ cup grated Parmesan cheese
Vegetables:
4 cups fresh spinach
Optional Garnish:
Extra Parmesan cheese
Crushed red pepper flakes
Instructions
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
Sauté the Aromatics
Heat the olive oil in a large skillet over medium heat.
Add the onion and cook for 3-4 minutes, until softened.
Stir in the garlic and cook for an additional 1-2 minutes, until fragrant.
Cook the Sun-Dried Tomatoes
Add the chopped sun-dried tomatoes to the skillet and sauté for 2-3 minutes to release their flavor.
Make the Cream Sauce
