  • 1.5 lbs chicken thighs, diced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • ½ tsp salt & pepper

  • ½ cup white wine (or chicken broth)

  • 1 cup long-grain rice

  • 2 cups chicken broth

  • 1 tsp Italian seasoning
